To overcome this, the Dan-O's and Pappy & Company production teams isolate coarse sea salt and hearty whole-seed spices, allowing them to rest inside charred American white oak casks for several weeks under controlled humidity.
During this maturation phase, the salts absorb residual alcohol vapors, wood sugars, and char from the barrel staves. The wood itself imparts natural vanillin, toasted caramel aromas, and a delicate wood-smoke undertone without adding detectable liquid or raising the finished product's ABV above 0.0%. Once conditioned, these barrel-rested components are combined with Dan-O's signature base: dried lemon peel, cracked pepper, garlic, and Mediterranean herbs.
The result is a distinctive gourmet spice blend that functions as an elevated smokehouse rub.
